Ingredients:
- 600 grams of pumpkin, peeled, seeded and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 cups (750 ml) of chicken or vegetable broth
- 1/2 cup (120 ml) heavy cream (you can use coconut milk for a dairy-free option)
- 1.5 tablespoons olive oil
- Salt and pepper to taste
- Nutmeg (optional)
- Toasted pumpkin seeds for garnish (optional)
- Chopped fresh parsley for garnish (optional).
Instructions:
1 - Prepare Ingredients: Peel the pumpkin, remove the seeds and cut into cubes. Chop the onion and garlic.
2 - Sauté the vegetables: In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5-7 minutes. Add the garlic and cook for 1-2 minutes more, until fragrant.
3 - Cook the squash: Add the squash cubes to the pot and mix well with the onion and garlic. Pour in the chicken or vegetable broth, making sure the squash cubes are completely covered. Bring to a boil.
4 - Simmer: Reduce the heat to low, cover the pot and let the mixture simmer for about 20-25 minutes, or until the squash is very tender.
5 - Make the Puree: Use a hand blender to puree the soup directly in the pot until smooth. If you don't have a hand blender, you can transfer the soup in batches to a blender and blend until smooth. Be careful when blending hot liquids.
6 - Add the Cream: Reheat the pureed soup if necessary. Add the cream (or coconut milk) and blend well. Season with salt, pepper and a pinch of nutmeg if desired.
7 - Serving: Serve the warm pumpkin cream in bowls. Garnish with toasted pumpkin seeds and chopped fresh parsley if desired.
